Executive Chef

About the role

Avani+ Luang Prabang is looking for an Executive Chef. The role covers planning and organising, operations and product quality, departmental leadership, health, hygiene and safety, and marketing and guest relations, within the hotel's food and beverage offering.

Key responsibilities

• Take part in preparing and implementing the hotel's strategic plan, plan the yearly food revenue and profit targets, and work with hotel management on kitchen reinvestment.
• Analyse local market needs and trends, define the hotel's overall food and beverage offering, and manage menu preparation and pricing in line with hotel and brand objectives.
• Develop new menus and food items, keeping sensitivity to local cultural traditions and religious beliefs in food preparation and service.
• Ensure food quality, presentation and standards, monitor guest satisfaction, and implement procedures to minimise wastage and over-production.
• Support staff on task force missions for opening new Minor Hotels and other MINT properties and special events.
• Maintain kitchen professionals' awareness of the F&B strategy, direct and coordinate daily kitchen activities, coach and train new team members, and liaise with HR on recruitment and interviewing.
• Control the department's payroll and business expenses, manage supplier relationships and contracts, and support staff in competitions.
• Maintain high food hygiene and health and safety standards, report hazards, liaise with the Chief Engineer on equipment and fire equipment maintenance, and ensure proper storage of raw and processed food.
• Keep work areas tidy and clean, instruct staff on emergency measures, and keep a first aid kit in the kitchens.
• Represent the hotel at guest and official functions.
